Yesteday’s healthy baking)

I decided to experiment with ingredients and it turned not bad)
Pumpkin bread which I posted before, but I doubled ingredients to make it bigger. 
Cake with figs and dry apricots.
400-500 g of whole wheat flour
50-60 g of oat bran
650 ml of kefir
100 ml of orange juice
4 eggs
180 g of figs
80 g of dry apricots
1 tsp of turmerec
1 tsp of baking soda
Lemon juice (about 1/2 of tsp)
Sweetener
Orange zest
Vanilla extract

Lemon muffins with raisins

400 grams of flour (I have 200 grams of whole rice flour, 200 grams of corn flour)

2 eggs

300 ml of milk

60 grams of creamy 82.5% butter or coconut oil

70 grams of raisins or other dried fruits (pour warm water for 20 minutes)

vanilla extract, lemon peel

1 tsp soda + lemon juice

sweetener

a pinch of salt

1.Separate the yolks from whites. Whisk yolks with a sugar substitute, add melted butter and half of milk + 200 grams of flour, stir. Pour the remaining milk + 100 grams of flour. We extinguish soda with lemon juice, add vanilla extract and zest. There also raisins.

2.Whisk whites with a pinch of salt to the peaks. Add gently into the dough, gradually pouring the remaining flour.

3.Pour  dough to the forms and send them to the preheated oven 180 С for 50-60 minutes. After that wait till it is completely cool.
