Jam from green walnuts for the winter

Unusual and very healthy – young walnut jam. Many housewives do not know all the intricacies of making such jam, therefore they do not undertake to cook it.

Ingredients:

1 kg of green walnuts;
1 liter of water;
2 kg of sugar;
zest of 1 lemon;
1 tsp citric acid;
1 cinnamon stick;

Cooking method:

  1. First, you need to stock up on a small number of green walnuts. Walnuts must be green, which, when pierced with a toothpick, are easily pricked, and inside are completely white.
  2. Wash the nuts, peel them off and be sure to make punctures in several places with a toothpick.
  3. Soak the nuts in cold water for 10 days. During this period of time, it is necessary to change the water several times. During this time, the nuts should change their color to dark, become even softer. When washing and cleaning nuts, be sure to wear rubber gloves or any bags on your hands.
  4. After 10 days of soaking, pour the nuts with clean water, put on medium heat, and boil after boiling for 20 minutes. The process of soaking the nuts cannot be skipped and this must be done for at least 10 days, otherwise, the finished jam may turn out with pronounced bitterness.
  5. After 20 minutes of cooking, discard the nuts in a colander, drain the water.
  6. While the nuts are cooling, boil the syrup in a clean container: mix one liter of water with 2 kg of sugar and boil until it is completely dissolved.
  7. When the syrup has boiled, put the nuts in it and boil for 20 minutes, stirring constantly and removing the foam that appears.
  8. After cooking, turn off the fire, cool the jam.
  9. The whole cooking process must be repeated 3 times for 20 minutes. Be sure to cool the jam between boils. If you want to get a thicker jam, then the last time you need to boil it for 60 minutes.
  10. During the last boil, add lemon zest, citric acid, and cinnamon stick.
  11. Arrange the finished jam in sterile jars, store it in a cool place.

In conclusion, I would like to add that green walnut jam should be consumed in small quantities, about 2-3 teaspoons a day.
