Sea buckthorn marmalade

A healthy sweet and sour treat. Agar-agar can be replaced with gelatin, in the amount indicated in the instructions.

Sea buckthorn (juice) – 250 ml
Sugar – 80 gr
Agar-agar – 5 gr
Water – 100 ml

Cooking method:

Extract juice from frozen or fresh sea buckthorn by crushing the berry with a crush and squeezing the cake through a cheesecloth. Mix the juice with the sugar and slowly bring to a boil on the stove. Then remove from heat.

Soak agar-agar in water at room temperature. You can immediately use a saucepan or saucepan in which the marmalade will be prepared. Bring agar-agar to a boil, and keep on low heat for a couple of minutes, stirring occasionally. You get a viscous mass. Pour the warmed juice with sugar into it, mix, and immediately pour into molds.

It is not necessary to simultaneously heat the juice together with the agar – because of the acid of the berries, the marmalade may not “grab”.

As forms, you can use baking dishes, silicone for ice, sweets, muffins. Leave the marmalade to cool, gradually it will become dense. Cut into pieces or remove from molds and you can eat right away. For storage, you can roll gummies in a mixture of powdered sugar and starch, or in sugar.
