- Grind everything in any convenient way. I love using a manual vegetable cutter for this purpose.
- First, place the mushrooms in a preheated pan (with a non-stick layer), simmer them for 3-5 minutes. Add eggplant and simmer for 7-10 minutes.
- Now add the onion and zucchini.
- Add seasonings and salt (I do not use) to taste, simmer, stirring for another 10 minutes.
- Garnish with herbs and tomatoes when serving!
