Dietary mushroom stew without oil

Frozen mushrooms 300 g.
Eggplant 400 g.
Zucchini 200 g.
Onion 300 g.
Tomatoes (to decorate the finished dish) 50 g.
Seasoning to taste.
Greens to taste.

Cooking method:

  1. Grind everything in any convenient way. I love using a manual vegetable cutter for this purpose.
  2. First, place the mushrooms in a preheated pan (with a non-stick layer), simmer them for 3-5 minutes. Add eggplant and simmer for 7-10 minutes.
  3. Now add the onion and zucchini.
  4. Add seasonings and salt (I do not use) to taste, simmer, stirring for another 10 minutes.
  5. Garnish with herbs and tomatoes when serving!
