Beet salad with chickpeas

Preparation: 1 hour
Cooking: 20 minutes
Recipe for: 4 persons

Proteins – 15 g

boiled beets – 250 g
Green bell pepper – 1 g
chopped greens – 1 handful
smoked chicken drumsticks – 1 pc.
chickpeas – 150 g

garlic – 2 cloves
Extra Virgin olive oil – 5 tbsp.
thyme – 1 pinch
salt – to taste
chili flakes – to taste

Cooking method:

  1. Boil the beets in advance.
  2. You can take canned chickpeas – a jar. I soak dry chickpeas in water for a day. Then I drain the water and pour in the clean one. Boil until tender. I store it in the refrigerator under the lid, draining the liquid.
  3. Cut the beets into small cubes. Combine with chickpeas. Visually, there should be approximately the same amount.
  4. Cut the meat off the smoked chicken leg. Finely chop the pepper. Pour into a bowl.
  5. Chop any greens: parsley, dill, green onions. Mix.
  6. Mix everything for dressing, beat with a blender. Drizzle over the salad. Mix everything well.
