Marinated zucchini with honey

We need:

500 g zucchini
0.5 tsp salt

100 ml. vegetable oil
3 tablespoons vinegar (preferably wine or apple cider)
2 tbsp honey
2-3 cloves of garlic
ground black pepper
fresh herbs

Cooking method:

  1. Prepare all ingredients. If the zucchini is young, then you need not peel it.
  2. Cut the zucchini into thin strips with a peeler and place in a deep bowl. Season with salt, stir and leave for 30 minutes to let the zucchini juice.
  3. Prepare the marinade. Pass the garlic through a press, mix with vegetable oil, honey, vinegar, pepper, and finely chopped herbs.
  4. After 30 minutes, drain the resulting liquid from the zucchini, wring it out with your hands. Pour marinade over, stir.
    Refrigerate for 2-3 hours. During this time, you can stir a couple of times.
