Pumpkin Cheesecake 

If you like cheesecake, you can always cook this delicious pumpkin dessert. For this simple recipe, you will need the following ingredients:

25 grams of oatmeal. In this recipe, be sure to use only whole grain long-cooked flakes.

15 grams of coconut. Here we are talking exclusively about low-fat chips.

20 grams of rice flour.

30 ml low-fat kefir

sweetener to taste.

This will be the basis of our cheesecake. We will need to chop oatmeal and coconut in a blender. Then mix the resulting mass with other ingredients and put everything into shape, pressing down with your hands. Use a small form (16 cm fits), as we still need a larger form.

Now let’s get into the top layer.

150 grams of low fat cottage cheese.

200 grams of pumpkin puree.

2 eggs.

1 teaspoon of cornstarch.

200 grams of sour cream. We take low-fat sour cream 10% fat.

Any natural sweetener to your liking.

We mix all the ingredients with a blender and pour on our base. Now we put our form with the cheesecake into another larger form and pour ordinary water there (up to half of the first form). We send it to the preheated oven for 45 minutes, at a temperature of 180 degrees. Then turn off the oven and let the cheesecake stand for another 30 minutes. We get out of the oven and let cool. We put it in the refrigerator for the night.

Pumpkin Candy 

Love sweets, but have to control yourself on the right diet? Why not make healthy pumpkin candy? The main secret to making this dessert is that we will use raw pumpkin, which means that you will get an excellent dose of vitamins and fiber. For this recipe you need the following ingredients:

250 grams of pumpkin. It will need to be grated on a coarse grater and squeezed juice. Do not pour the juice, it may still be useful to you during the preparation process.

150 grams of sunflower seeds. We use already peeled unroasted seeds. They need to be filled with water and let them brew for a couple of hours.

100 grams of pitted dates. They can be soaked with seeds. We will use dates as a natural sweetener.

45 grams of oatmeal. You can use any cereal.

35 grams of coconut. Remember that regular chips contain a lot of calories, so low-fat chips are used in dietary recipes.

All you have to do is send all the ingredients to a blender and grind to a uniform state. If your mass is too dry, you can always add a little pumpkin juice. If it turns out to be liquid, add a little oatmeal.

From a homogeneous mass we mold our sweets. Ready candies can be rolled in carob, coconut chips or cocoa.

Waffles in a waffle maker with pumpkin 

Do you like delicious breakfasts? Then why not try pp waffles with pumpkin? This is the perfect start to any day! For this simple and tasty recipe, you will need the following ingredients:

150 grams of pumpkin puree. We make mashed potatoes according to the already familiar scheme. You can bake or boil a pumpkin, and then chop in a blender.

100 grams of cottage cheese. To add more protein to our diet, we will cook waffles with cottage cheese. Use low fat cottage cheese. This product contains only about 70 calories per 100 grams.

30 grams of oatmeal. We will use them instead of ordinary wheat flour.

1 egg

20 grams of raisins. And here is our natural sweetener. If you want the waffles to be sweeter, you can put more raisins.

1 teaspoon of baking powder.

Now we mix absolutely all the ingredients and leave our pp dough for 15 minutes. During this time, the flakes will swell and become soft. Bake waffles in a waffle iron and enjoy a delicious and healthy breakfast.

Pumpkin Pudding 

And here is another tasty and healthy pumpkin dessert. This is a real vitamin storehouse with a minimum of calories. For this recipe you need to prepare the following ingredients:

500 grams of pumpkin. Cut into small pieces.

500 grams of apples. Peel and cut into small pieces.

250 grams of milk. Take skim milk, fat content 1%

7 tablespoons of semolina.

3 eggs. Separate the whites from the yolks. Beat the whites until white rush.

Any natural sweetener to your liking.

Put the pumpkin in any container and fill it with milk. We put on the fire, wait until it boils and simmer for about 10 minutes. Then we add apples there and again simmer everything together for another 10 minutes. Then add semolina and cook for another 5 minutes, stirring constantly. We remove from the stove and let the mixture cool. In the cooled mixture, put the yolks and sweetener, mix. And then carefully inject the proteins. We shift it into a baking dish and send it to the oven for 25 minutes at a temperature of 180 degrees.

Pumpkin souffle

And here is another diet dessert recipe that you can safely include in your diet. This dessert can be eaten at any time of the day, even for dinner, because it contains very few calories and only healthy substances. You will need these simple ingredients:

400 grams of pumpkin. Since we won’t use sugar, give preference to sweet pumpkin varieties. We clean, cut into pieces and set to cook. Then drain the excess water and beat the pumpkin with a blender. We get pumpkin puree.

200 grams of cottage cheese. Take fat-free cottage cheese. The main thing is that it should not be very sour, because we are preparing a dessert.

1 egg Separate the protein from the yolk. Beat the protein with a pinch of salt.

Now combine the cottage cheese with the yolk and beat with a blender. Then we mix the curd mass with pumpkin puree and once again beat everything well. At the very end we introduce the protein. We put the finished souffle into silicone molds and send it to the oven for 30 minutes, at a temperature of 180 degrees.

Dietary manty with pumpkin

During proper nutrition, we exclude most fatty and floury foods from our diet. But for this tasty and healthy dish with pumpkin you can always make an exception. Diet manty with pumpkin is a great way to pamper yourself on a diet, but without violating diet. So, for this simple dish you will need to prepare the following ingredients:

300 grams of flour.

150 ml of water. Maybe you need a little more or less. It depends on what kind of flour you will use.

½ teaspoon of salt.

Knead the dough. To make the dough elastic, you can add a spoonful of vegetable oil to it. Put the dough in the refrigerator for 30 minutes. In the meantime, let’s get down to our dietary filling:

200 grams of pumpkin. We cut into small cubes.

2 medium onions. Finely chopped.

Salt and pepper to your liking.

Mix all the ingredients. You can add a spoonful of vegetable oil and mix everything.

Now we take out the dough, roll out and cut pieces of 10 into 10. For each piece of dough, add 1-2 tablespoons of filling and turn into manty. We cook our manty for a couple of about 40 minutes.

How to serve such a diet dish? A great option is sauce made from natural yogurt.

Natural yogurt + chopped herbs + 1 tablespoon of lemon juice + 1 clove of garlic.

Diet Pumpkin snack

Want to take a tasty snack with you? Try pumpkin sticks! This is a great recipe for those who want a quick and healthy meal. You need the following ingredients:

300 grams of pumpkin. Cut into small sticks, like french fries, a little thicker.

30 grams of cornstarch.

Any spices to your taste. Here you can give free rein to your imagination.

We combine starch with spices and properly roll our pumpkin sticks in the resulting mixture. We send it to the oven, heated to 200 degrees for 20 minutes.

Pumpkin seeds how to dry correctly

So, you have a pumpkin and there are seeds. In no case do not discard the seeds, because they can be dried. Pumpkin seeds are a storehouse of useful vitamins and minerals, so they can and should be included in your diet. But how to dry them?

First of all, you need to rinse them very thoroughly under running water. Rinse until the feeling of viscosity disappears.

Then put them on a paper towel. Get wet one more from above. Seeds should be completely dry.

Now you can spread the seeds on a baking sheet with a thin layer. We send it to the oven, heated to 70 degrees, for 20 minutes. Stir the seeds periodically.
