Autumn pumpkin recipes, part 2

Hello everyone! For those who do not know, I am in the United States at the moment. It was my first real Halloween in the US, I have never seen so many children dressed like little monsters, superheroes, or cute fairies. That was awesome. We did not have time to decorate the house, but we have got a Halloween bucket, lots of candies, and pumpkin tools) Still did not have a chance to carve the pumpkin, but it is not the end) You know, in Ukraine we do not celebrate it this way. Honestly, it is not our culture and only last a few years the nightclubs started to offer Halloween parties and children got to learn about Halloween celebrations at schools.

So, in my opinion, I love it, one boy even scared me yesterday evening, he came to trick or treat and was hiding behind the open door, so I could not see him, when I started to look for somebody who ringed the bell, he just jumped on me (he was wearing scary clown costume), well, that was unexpected.

Pumpkin cookies

Do not know what to eat on a diet? With the help of pumpkins, you can make healthy cookies, which will be an excellent snack during the day. For this simple recipe, you will need the following ingredients:

200 grams of pumpkin puree. First, you need to bake this delicious fruit and grind it in a blender.

100 grams of oatmeal. Add half the cereal in its pure form, and chop the second half to the state of oatmeal.

1 egg

A pinch of baking soda and salt.

Sweetener to taste. We immediately put it in pumpkin puree and mix thoroughly.

Now we combine all the ingredients, mix and form cookies. Bake in the oven for about 25 minutes, temperature 180 degrees.

Pumpkin porridge 

Do you like porridge? But what about cooking not porridge with milk, but porridge with pumpkin, and also diet porridge, which can be eaten on a diet and lose weight.

Depending on which cereal you like more, you can cook porridge with rice or millet. It all depends on your taste preferences because these two bowls of cereal are perfectly combined with pumpkin. We will cook porridge with millet. The porridge turns out beautiful, pleasant in color, and insanely tasty. By the way, such porridge is not only a great breakfast but even a healthy dessert! For this porridge you need the following ingredients:

500 grams of peeled pumpkin. Cut into small pieces.

60 grams of millet. Since our porridge is dietary, we will use very little cereal.

400 ml of milk. You can take fat-free. 100 ml of such milk contains only 30 calories.

Natural sweetener to your taste. You can use honey.

Put the pumpkin in the pan and add 200 ml of milk. We put it on a small fire for 30 minutes. Then add millet and leftover milk. Cook until tender. At the end we put honey.

Pumpkin Salad

Want to spend a detox day? With the help of pumpkins, you can prepare an excellent dietary salad, which will help to gently cleanse the body of excess toxins and improve the functioning of the gastrointestinal tract. For this salad, you will not need to boil the pumpkin, as we will prepare a salad of raw pumpkin. And this is a real storehouse of vitamins, nutrients, and fiber! So, to make such a salad, you need to use the following ingredients:

1 medium raw beetroot. Wash, clean, and grate or cut into strips.

1 medium carrot. Wash, clean, and grate.

150 grams of raw pumpkin. Cut into small strips or grate.

a handful of arugula. This ingredient can be replaced with any other herbs of your choice.

Separately, prepare a dressing for this diet salad. To do this, mix:

1 tablespoon of olive oil + juice of half a lemon + favorite spices.

To reduce calories, you can replace vegetable oil with balsamic vinegar if desired.

Pumpkin pancakes

Do you want a tasty and healthy breakfast, but dream about pancakes? You can cook pumpkin pancakes and feel free to include them in your diet. For this recipe you need the following ingredients:

450 grams of pumpkin. We peel the pumpkin and grate it.

3 eggs. Beat them with a mixer.

150 grams of rice flour. This flour will make our pancakes airy and tender.

150 grams of kefir. Take fat-free kefir.

½ teaspoon of soda.

½ teaspoon cinnamon.

Any natural sweetener to taste.

We mix all the ingredients and bake pp pumpkin pancakes in a non-stick pan.

Diet Pumpkin Cutlets

Do you want something light and unusual? Try light pumpkin vegetable patties. The secret to this dish is that only light and low-calorie ingredients are used here. In addition, we will not fry cutlets in vegetable oil but will bake them in the oven. So, for this diet dish you will need the following ingredients:

250 grams of pumpkin. Boil for about 2 minutes in water, so that the pumpkins are slightly softened.

250 grams of cauliflower. Also, boil in water for about 5 minutes.

30 grams of whole grain flour. You can grind oatmeal in a coffee grinder if there is no flour.

1 medium onion. We clean.

Salt and spices to taste.

1 egg It is needed in order to hold our patties together.

Now we send pumpkin, cabbage, and egg, as well as all spices to the blender. Beat and then add an egg and a little flour to our dietary minced meat. We put our patties into pre-prepared cupcake molds and send them to the oven for 30 minutes, at a temperature of 180 degrees.

If you eat good nutrition, you are probably trying to limit your bread intake. But sometimes I really want a piece of fragrant bread. To help you come to a recipe for pumpkin bread. The recipe itself is very easy to prepare and you can treat yourself to delicious bread at any time. You will need these ingredients:

180 grams of ready-made pumpkin puree. You can bake the pumpkin for mashed potatoes in the oven or boil. Then grind in a blender.

130 grams of rice flour. So our bread will be magnificent and airy.

100 ml of any milk. Skim milk can be used.

2 eggs.

a pinch of salt.

Any spices of your choice.

1 teaspoon of baking powder.

Combine all ingredients and beat thoroughly with a blender. Then put the dough in the form and send it to the oven for 40 minutes. The temperature is 180 degrees.

Healthy candied pumpkin

Do not know what can replace harmful and high-calorie sweets? We have a great solution. Healthy candied pumpkin is a completely dietary version of a real treat, which can replace not only sweets but also such high-calorie dried fruits. To prepare such candied fruit is very simple. You will need the following ingredients:

400 grams of pumpkin. We peel and cut into small cubes, about 1 cm per 1 cm.

100 grams of plain water.

any natural sweetener to your taste.

1 stick of cinnamon.

juice of half a lemon.

zest of orange.

We put the chopped pumpkin in a pan, fill it with water and add sweetener, lemon juice, orange zest, and cinnamon. We set to cook on medium heat. Bring to a boil and cook for about 5 minutes. Then remove from heat and let cool. All this you will need to repeat 4 times! At the very end, pour the syrup and put the pumpkin on a sieve so that the excess liquid is gone. We spread the pumpkin on a baking sheet and at a temperature of 80 degrees we dry for about 4 hours.
