Mushroom soup – 7 best recipes

Mushroom soup is an excellent healthy dish that fits perfectly into any diet menu! Mushrooms contain very few calories – about 20 calories per 100 grams, but at the same time, they are a valuable source of protein! That is why mushrooms occupy a special place in the diet. 

To prepare a truly low-calorie dish, you need to follow these rules:

  1. To prepare a diet soup and reduce calories, discard potatoes. It can be successfully replaced with other vegetables that contain fewer calories, but more benefits. Pay attention to broccoli, cauliflower, green beans, green peas, white cabbage!

2. Watch for the use of vegetable oil. Most healthy recipes do not involve frying vegetables at all. If you add vegetable oil, then no more than 1-2 tablespoons for the whole finished dish!

3. Add low-fat meats to the mushroom soup. Ideally, this is chicken (sirloin) or turkey.

When preparing diet mushroom soup, you can use cereals: rice, buckwheat, barley. It will also be a great substitute for potatoes.

4. Do not forget about beans. Beans and lentils are ideally combined with mushrooms and at the same time are a source of protein.

20 grams of dried porcini mushrooms. Fill with water and leave to swell for 1 hour.

1 medium carrot. Wash, clean, and grate.

1 medium onion. We clean and finely chop.

350 grams of ordinary cabbage. Finely chopped.

300 grams of cauliflower. Wash and disassemble into inflorescences. Boil in salted water in a separate bowl until fully cooked.

Salt and spices to taste.

 First, boil the mushrooms for 30 minutes in salted water. Then we put onions and carrots and cabbage to them. Cook until vegetables are soft. Add boiled cauliflower to the soup, salt, pepper!

100 grams of hard cheese. Rub on a coarse grater. You can use low-fat varieties of cheese, then you will make your soup even more low-calorie.

200 grams of frozen vegetables. Good to use broccoli.

200 grams of fresh mushrooms. Rinse and chop thoroughly.

2 boiled eggs. Chopped.

Salt and spices to taste.

In salted water add mushrooms and vegetables. Cook until fully cooked. Then put the grated cheese and cook until it is completely dissolved. It remains to add the egg and greens to the soup!

Diet low-calorie mushroom soup 

For this simple recipe, you need to prepare the following ingredients:

500 grams of mushrooms. Rinse thoroughly and cut into slices.

1 medium carrot. Wash, clean, and rub on a medium grater.

1 onion. We clean and shred.

4-5 tablespoons of rice. If desired, you can use pearl barley. We wash the rice with water. You can pre-soak.

Salt and spices to your taste.

In the pan, we put mushrooms, carrots, onions and pour water. Bring to a boil and cook for 10 minutes. Then we put rice, salt, pepper, reduce the heat and leave to simmer until fully cooked! Diet soup with mushrooms is ready!

Want to make a truly low-calorie soup? Then this recipe is perfect for you:

500 grams of champignons. We rinse them thoroughly under running water to remove all the sand and cut them into pieces.

1 medium onion and 1 medium carrot. Washing, peeling vegetables, and finely chopping. Can be chopped in a blender.

350 grams of milk. If you wish, you can use skim milk, it contains only 30 calories per 100 grams.

400-500 ml of water. You can put less or more depending on what consistency of soup you prefer.

Salt and spices to taste.

Any greens.

We put the champignons in the pan and fill with water. We set to cook for 10 minutes. Then add onions and carrots, cook another 10 minutes. In the end, pour a cup of milk, reduce the heat and leave the dish to simmer until all the vegetables are ready. Add spices and beat with a blender. Mushroom cream soup, the calorie content of which does not exceed 35 calories, is ready!

Mushroom champignon soup

For this delicious soup you will need the following ingredients:

200 grams of champignons. Rinse under running water and chop.

3 tablespoons of lentils. Unlike beans, this product cooks quickly and is perfect for soup.

100 grams of green beans. It contains a lot of fiber and is ideal for diet food.

100 grams of green peas. You can use frozen peas.

1 medium carrot. Wash, clean, and grate.

1 medium onion. We clean, finely shred.

1 tablespoon of olive oil.

For this delicious low-carb recipe, you’ll need the following ingredients:

1 chicken fillet. Wash, grind in a blender, or pass through a meat grinder. Add salt and pepper.

1 egg

400 grams of champignons. Rinse thoroughly, cut into pieces.

1 medium carrot. Wash, clean, and cut into thin half-rings.

1 medium onion. Finely chopped.

700-800 ml of water.

Salt and spices.

Any greens to taste.

To begin, put all the vegetables in a container, fill it with water, and put it to a boil. While the vegetables are cooked, we will do the stuffing. We make minced meat and add the egg and spices into it, mix thoroughly. Now we form the meatballs and put them in our diet mushroom soup. Cook until meat is cooked, sprinkle generously with herbs!

Do you like honey mushrooms? Then you should definitely try this mushroom soup:

200 grams of honey mushrooms. You can use fresh mushrooms, and you can use frozen ones.

200 grams of turkey. Wash, cut into pieces.

200 grams of frozen spinach. You can also use fresh, the main thing is to thoroughly rinse it and finely chop it.

1 medium carrot and 1 medium onion. We clean and finely chop.

5 tablespoons of pearl barley. We rinse with water.
