Lemon Lean Pie with Greek Raisins and Nuts

This tasty and simple Greek pie is prepared without eggs, but there are a lot of nuts, raisins, and spicy additives in it that permeate the dough with amazing flavors and add the taste of the holiday to baking!

Raisins can be put inside the lean cake or served with the pie. For an even richer taste, you can put 1-3 tablespoons of cocoa in the dough.


1 cup of vegetable oil (better than olive oil);

1.5 cups of coconut sugar (I took brown, but not fundamentally);

1.5 cups chopped walnuts (finely chopped);

1 cup raisins;

4 cups whole wheat flour;

2 glasses of water;

0.5 glass of brandy (or liquor, you can – dessert wine);

1 tablespoon ground cinnamon and ground cloves;

the rind of 1 lemon;

3 teaspoons of baking powder.

For decoration (optional)

1 cup chopped walnuts (larger sliced).

Mix flour, cinnamon and cloves, and baking powder. Add butter. Mix well.

Add sugar, water, walnuts, brandy, lemon zest, and raisins.

Raisins should be pre-washed, brewed with boiling water, after 10 minutes – fold in a colander and pour into the dough.

At the same time, you can add cocoa.

Mix well.

Put the dough in a greased form.

Bake in the oven (temperature about 160-180 degrees C) for 1 hour.

Focus not on time, but on the alluring aromas and the test for piercing with a wooden stick (if the stick comes out dry, without adhering lumps – ready).

Cool the finished cake in the form (15 minutes), covered with a towel or napkin. Then remove and cut into portions. Sprinkle walnut pieces on lemon pie.

Lean Chocolate Muffin (Pie)

This is a delicious lean cupcake with a pronounced chocolate and citrus flavor. It has a lot of peel (you can put both orange and lemon), there is orange juice.

A lean chocolate pie will be very tasty to add fresh cherries without a stone (you can put it after adding flour).


Orange or lemon juice – 1.5 cups;

Peel – 2-4 oranges or lemons;

Coconut sugar – 1.5 cups;

Cocoa – 6-7 tablespoons;

Vegetable oil (lean: sunflower or olive) – 1 cup;

Water – 1 cup;

Whole wheat flour – so much so that the consistency of the dough was viscous, thick, slowly flowing, like fat sour cream (2 glasses or more);

Baking soda – 1.5 teaspoons;

Baking powder – 1 tsp.

Combine vegetable oil, orange (or lemon) juice, and soda. Mix well. From the combination of soda and sour citrus juice should be formed foam, do not worry.

Add baking powder, cocoa, water, sugar, and zest. To stir thoroughly. Add flour – slowly, stirring with a whisk.

Put the dough in a greased form and bake in a preheated oven at a temperature of 160-180 degrees C for about an hour. The sign of readiness is the same as in the previous recipe for lean lemon pie.

Remove the ready cupcake from the oven, cool under a towel (about 15 minutes), and then remove from the mold.

 Nutty Lean Pie with Apple, Orange, and Carrot

Another Greek cake that will delight you with its spring-summer taste and will add vigor and optimism in the days of Lent.

This nut-fruit pie, like the previous lean pastries, can be prepared in the form of a regular muffin or in a cake pan (with a hole in the middle).

In this lean pie recipe, ingredients are measured by coffee cups, but you can instead change the proportions by taking the glass as a unit of change. Just remember that baking soda should be taken then, approximately, 1.5 times more. You can also increase the amount of zest and citrus juice.

The main thing is that the consistency of lean dough for the pie was very thick and viscous. This dough can not quickly flow trickle into the form, and slowly overflow (you can help yourself with a spoon).


Walnuts (finely chopped or minced) – 1 coffee cup;

Whole wheat flour – 2.5 coffee cups (approximately, focus on consistency);

Lean oil (olive or sunflower) – 3/4 of a coffee cup;

Juice and zest from 1 orange;

Peel of 1 lemon;

Coconut sugar – 0.5 coffee cup + 1 coffee cup;

Grated carrots (coarse grater) – 1 coffee cup;

Apple (small cubes) – a coffee cup;

Baking soda – 1 tablespoon.

Combine olive oil with sugar and whisk (with a fork, chef, or mixer).

Dissolve soda in orange juice and add to bowl with sugar. Add grated carrots and apple slices (cubes), flour, zest, nuts. Mix well.

Lean chocolate is bitter (dark, black), there are no additives from milk or cream, only cocoa, powdered sugar, and cocoa butter.


Butter – 125 g;

Brown sugar – 1 cup;

Vegetable oil (Greeks take corn in the recipe) – 1 cup;

Orange juice – 3/4 cup;

Baking soda – 1/2 tsp;

Cognac (liqueur or dessert wine) – 3 tablespoons;

Whole wheat flour – 5 glasses;

Baking powder (bacpulver) – 2 tablespoons;

Cocoa -2-3 tablespoons;

Walnuts (ground) or hazelnuts (or coconut) – 1/2 cup;

Grated bitter chocolate – 1/2 cup (this is 1 tile = 100 g);

You can also take 1 bar of chocolate for decoration.

Make a lean chocolate shortbread dough

Whisk up the margarine (lay down at room temperature) with vegetable oil and sugar – it will be faster in the food processor. It should turn out a white, fluffy mixture.

Add baking soda mixed with orange juice to the oil mixture (at the time of mixing the juice and soda, the reaction will occur with the release of bubbles, which will loosen the dough). Add cognac.

Gradually add flour mixed with cocoa and baking powder. When adding flour, continue to slowly beat the dough. Add the last cup of flour and knead the dough by hand, because the harvester will already be hard, the dough is thick and dense.

Combine the dough with chopped nuts and chocolate and knead the dough well again.

1 teaspoon of baking soda dissolved in orange juice;

Baking Powder – 2.5 tsp;

Cognac (brandy) or liquor, sweet wine – 0.5 glasses;

Whole wheat flour – 850 g;

Vegetable oil (olive or sunflower) – 1 cup;

Orange juice – 1 cup + zest of 2 oranges;

Coconut or brown sugar – ½ cup

You can add pieces of nuts (0.5-1.5 cups, how many there are).

In a blender, mix all wet ingredients with sugar and whisk for 2 minutes.

Then gradually add flour to the bowl with the liquid basis of the dough, kneading with the hands so as to make a soft, lean dough.

Cut out cookies. It is convenient to spread the cookies not directly on the baking sheet, but on the parchment (baking paper), so the cookies will easily come off and you should not wash the baking sheet. Bake in an oven heated to 170 degrees for 12-15 minutes. As the smell of baking appeared – the lean cookies are ready!

Cool under a towel, store the cooled cookies in a can or in a plastic bag (hermetically sealed).

Lean Cookies with Chocolate and Nuts

This is a very tasty and mild chocolate cookie for Great Lent, which the Greeks took out of the oven quite quickly (12-15 minutes from the beginning of baking), when it didn’t even reach, compared to a regular cookie. And then it turns out soft, closer in structure to the carrot than to the sandy pastry. 


Vegetable oil – 3/4 cup;

Brown sugar – 2 cups;

Table vinegar (can be replaced with white sour wine or lemon juice) – 3 tablespoons;

Salt is a small pinch;

Vanilla extract – 1 tablespoon (optional);

Baking soda – 2 full teaspoons;

Cocoa – 8 full tablespoons;

Water – 1 cup;

Whole wheat flour – about 3.5 glasses;

Dark chocolate – 300 g (finely chop or take chocolate koveyur in the form of chocolate jelly beans or chips);

Hazelnuts (or walnuts) – 3/4 cup (optional, and tasty without them)

How to make soft lean cookies with chocolate and nuts

Prepare lean dough for cookies

Mix butter and sugar for 3 minutes with a mixer. Continuing to whisk, add vinegar, baking soda, salt, and vanilla extract.

Add cocoa and water. Whisk another 1 minute. Sugar is not completely dispersed, it’s not scary.

Gradually add flour. The amount of flour maybe a little more or a little less. The main thing is to get the dough soft and sticky (a little softer than for ordinary sand cookies).

Add chocolate and nuts to the dough. Knead well.

How to spread cookies for baking

Baking sheet with baking paper (you can simply spread out the unpainted butter cookies) and put the dough in portions with 2 spoons (you can dip the spoons in hot water so that the dough does not stick and slide off). Future cookies should be at a distance from each other (approximately, 3 cm) because it increases in volume during baking. My dough was rather plastic, I just rolled the balls, and then flattened them in cookies.

Bake in a preheated oven at 180-200 degrees C for 12-15 minutes.

Sign of readiness – the first delicious smell of baking. Cookies may not be fully baked when taken out of the oven.

However, if you keep cookies until they are ready (when it is evenly firm), then cooled, it will become very hard. But even then it can be soaked in tea or coffee and there is. And it will also be very tasty!

Immediately remove the cookies from the baking sheet (otherwise it will stick to the paper), immediately hook it with a spatula and place it on a flat, smooth surface.

Cooked cookies should cool under a towel and then store in a tin or tightly closed bag. Inside it is soft as if stuffed.
