Oatmeal cookies with banana and orange

250-280 g of oatmeal

Handful of walnuts

100 grams of light raisins

70 ml of freshly squeezed orange juice with

1 orange peel

1 large banana

40 ml of olive oil

1 tablespoons Honey or stevia

5 g of baking soda

a pinch of salt

cinnamon

a pinch of nutmeg

Mix flour, salt, zest and baking powder. (You may need a little more flour)

Mix banana puree, orange juice and olive oil.

Gradually add the liquid mixture to the dry and knead the dough. Add nuts and chopped dried apricots. Mix again.

Form a cake on baking paper (grease paper). (the dough should be soft, but so that it can be formed by hand) Slice like a pizza on and bake for 15 -20 minutes at 180 gr.
