The cooking cake begins with the preparation of nuts for the cream. To do this, a glass of cashew nuts should be soaked for at least a day. Let’s make a raw cheesecake without nuts. To create a cheesecake according to the traditional recipe, cookie crumbs and cottage cheese are used. But it is absolutely not suitable for raw foodists who do not eat animal products. Therefore, they make cheesecake from such products as green buckwheat, carrots, beets, cocoa butter, cocoa powder, lemon, and honey.

For the dough and cream, you will need 2 cups of buckwheat (green, of course), which in advance, preferably at night, pour water. In the morning sprouts will appear on it. After that, you should squeeze the juice from carrots and beets. For the test, you need only cake. Juice can be drunk, as it is not used in the recipe. Cake, zest of 1 lemon, half of the buckwheat sprouts, and 2 tablespoons of honey must be crushed with a blender until smooth. Now the dough must be dried at room temperature or in the oven at 40 degrees for about 12 hours.

Dry dough will be like a cookie. Now, as for the usual cheesecake, it needs to be crushed into a crumb, add a little water so that the mass becomes similar to clay, and put into a separable form. From above it is necessary to layout the filling: whipped remaining buckwheat sprouts, honey to taste, and 4 tablespoons of cocoa butter. A raw food cake must be kept in the freezer for 10 hours, and 15 minutes before it is eaten, get it out. If desired, before serving on the table, you can sprinkle the cheesecake with cocoa powder.
