Lemon muffins with raisins

400 grams of flour (I have 200 grams of whole rice flour, 200 grams of cornflour)

2 eggs

300 ml of milk

60 grams of creamy 82.5% butter or coconut oil

70 grams of raisins or other dried fruits (pour warm water for 20 minutes)

vanilla extract, lemon peel

1 tsp baking soda + lemon juice


a pinch of salt

  1. Separate the yolks from whites. Whisk yolks with a sugar substitute, add melted butter and half of milk + 200 grams of flour, stir. Pour the remaining milk + 100 grams of flour. We extinguish baking soda with lemon juice, add vanilla extract and zest. There are also raisins.

2. Whisk whites with a pinch of salt to the peaks. Add gently into the dough, gradually pouring the remaining flour.

3. Pour dough into the forms and send them to the preheated oven 180 С for 50-60 minutes. After that wait till it is completely cool.
